I was supposed to post a blog entry last night but got an emergency phone call from a friend and was on the phone for 3 hours. So here is my post...
Its a little late but my thoughts and prayers goes out to those who have lost someone during the earthquake in Italy.
Weekend was pretty quiet. Didn't do much except hitting the gym on saturday and then running outdoors sunday morning. It sure feels better running outdoors than indoors - if only the weather would warm up already. It supposed to be warm with a chance of showers tomorrow and wednesday. Hopefully that wont lower the temperature again.
Easter came and gone and what did I do. Went to Autozone to get a fuse for the power outlet of my car. Then I was planning to get some grocer but Shoprite was closed which didn't surprise me. Then just relax and watch some movies on TV. Well, I did watch Love Actually again on DVD before deciding to switch to TV to see what's on. Hmm.. seems like it was Martin Lawrence weekend because Bad Boys and Welcome Home Roscoe Jenkins was on consecutively. Anyway, I then cooked some spaghetti, stuffed sweet peppers and saute vegetables (that should take care of my meal this week). Spaghetti was the usual - sauce, meat, some garlic and onion, powdered mozzarella, and vermicelli. But the stuffed peppers were different. I used Neutfechal cheese for coating the pepper instead of egg. Here is the recipe if you want to try them out...
Stuff Sweet Peppers
10 small sweet peppers, heads sliced and de-seeded.
1 cup green peas
1 can (5 oz) Pink salmon
1 1/2 cup bread crumbs
1 pkg neufchatel cheese, cubed
1 cup water
Salt and pepper
1 tsp canola oil
Preparation:
1. Heat oil in a saute pan, add peas and salmon. Saute for 5 minutes. Add in 1/2 cup of breadcrumbs. Mix for another minute. Pour into a bowl.
2. Stuff peppers with enough salmon mixture to the top.
3. Heat saute pan. Add 1 cup water and let it boil. Add in neufchatel cheese. Stir until cheese melts. Lower to simmer. In a meantime, spread breadcrumbs in a plate
4. Heat oven to 250F. Using two spoons, dip each pepper into neufchatel cheese and roll to coat. Lift and roll into breadcrumbs. Set in a baking dish. Do the same to other peppers.
5. Place in the oven and bake for 15 minutes.
6. Serve with tartar sauce or salsa.

I hit the gym after work and then went to my Zumba class. Now I feel exhausted but it was sure worth it. haha...
Of course, im need to rest up again.. 4 days to go before the weekend... and yes, im already counting down..
